A quick, easy & tasty Valentines treat to share with your amore, Chicken breast crown flavoured in a tandoori marinade cooked in the oven on a bed of 3 grains

Tandoori Chicken served on a bed of grains

Ingredients

1 Chicken Crown
2.5 Tablespoon yogurt per Crown
5 Tablespoons mySpike Tandoori Seasoning
Squeeze ¼ lemon juice
2 tablespoon Oil

Optional

1 1-inch Crushed Ginger
3 Cloves Garlic
Few green chillies
Coriander handful
1/5 teaspoon red colouring
Season to taste

Option 2: Grains

1 cup Bulgur Wheat
1 cup Wild Rice
1 cup Orzo
Mixed Vegetables
Season to taste

Method

1) Preheat the oven 180c
2) In the bowl add all your ingredients including the optional. Do not add salt and pepper until you have tried the mixture, then season to taste.
3) At this stage I would squeeze some lemon
4) Give it another mix
5) mySpike your Chicken, remember to always Spike away from you.
6) Place the marinade all over the food

Option 2: Method

On the tray add the 3 grain types: rice, orzo and wheat with the vegetables and stir. Season to taste (pinch of salt and pepper)

Make a circle in the middle and place your loaded mySpike Chicken.

Add about 1 large cup of water check that it is all over and mixed well. Add more water I normally add about ½ inch above the food.

1. Place this all into the preheated oven and allow to cook

2. We recommend 45 mins for Chicken, (please check weight and recommended time and deduct 20mins from the packs recommended cooking time as the mySpike will help it cook faster).

3. Check your grains are cooked and serve

Serving Options on mySpike Board

Naan/ pitta
Salad

Yogurt chutney:

4 tablespoons yogurt
1 onion finely chopped into small cubes
Pinch of salt
1 teaspoon mint sauce
Pinch of ground cumin
Handful finely chopped coriander

Mix altogether and taste and season by adding green chilli crushed if you like it spicy

Garnish:

Lemon
Chopped Spring onions
Coriander
